FERMENTATION: at controlled temperature 28°C 

AGING: in oak barrels of 20 hl for about 30-32 months

SIGHT: ruby red color, with light violet reflections  

NOSE: Vinous, intense, vigorous, persistent and characteristic, with hints dominant morello cherry, strong fragrances of spices and tobacco  

TASTE: full, complete, authoritarian. A remarkable wine character and great longevity, ability to stay young even after a very long aging, velvety body shaped by passage in oak. All these features make it one of the most important of our oenology.

FOOD PAIRINGS: dishes of the great cuisine based on   game, mutton and mixed ragu 'of Cilento meat, rib steak grilled with porcini mushrooms
